How to Prepare

  • Defrost the albacore tuna by placing the vacuum package in refrigerator for 5-6 hours.
  • Remove tuna from package, rinse under cold water and wrap in paper towel.
  • Refrigerate until ready to enjoy.
  • Consume within 36 hours after defrosting. Keep all unused portions refrigerated at all times.

Known in Japan as shiro maguro (white tuna), albacore is extremely versatile. Prepare it as sashimi, grill, smoke or broil it. Some chefs prefer to sear the outside of the albacore fillet and immediately immerse it in cold water for a tighter, steak-like texture.
